Ingredients
- 6 large eggs
- ¾ cup cottage cheese
- 1 teaspoon baking powder
- ½ teaspoon kosher salt
- ½ teaspoon ground black pepper
- ½ teaspoon dried thyme
- 1 cup shredded gruyere cheese
- 1 cup fresh spinach chopped
- 6 slices bacon cooked and chopped

Instructions
Preheat oven to 350°F. Spray a 12-count muffin tin with nonstick spray. Set aside.
Add the eggs, cottage cheese, baking powder, salt, pepper, and thyme to a blender. Cover and blend for 30 seconds or until smooth.
