  • 6 large eggs
  • ¾ cup cottage cheese
  • 1 teaspoon baking powder
  • ½ teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • ½ teaspoon dried thyme
  • 1 cup shredded gruyere cheese
  • 1 cup fresh spinach chopped
  • 6 slices bacon cooked and chopped

Instructions

  • Preheat oven to 350°F. Spray a 12-count muffin tin with nonstick spray. Set aside.
