Directions

1

Preheat the oven to 350 degrees. Line a 9x9-inch baking dish with parchment paper for easy cleanup.

In a separate bowl, using an electric mixer, whip together eggs and keto brown sweetener until light and fluffy. Then slowly drizzle in the chocolate-butter mixture and add the vanilla. Mix on low until combined.

4

Using a spatula, fold in espresso powder, cocoa powder, almond flour, and baking powder.

So much chocolatey goodness!

There are a few tricks I learned along the way when it comes to making keto brownies. The most important thing is not to overcook them, which is hard! I have a difficult time knowing when brownies are done because you can’t really tell when they start to brown.

That’s why I’m calling it out there that these only need 15 to 20 minutes to bake, so you won’t want to step away from the oven for too long.

Tips for making the best keto brownies recipe:

  • As mentioned above, do not overbake these brownies! The toothpick rule doesn’t really apply. You actually want to have some crumbs on the toothpick. Start checking them around 15 minutes and do not bake them longer than 20 minutes. Trust me!
  • Parchment paper works best to keep brownies from sticking.
  • Take the eggs out of the fridge about 30 minutes before you plan to start making these brownies so they come to room temperature.
  • Let the chocolate butter mixture cool for a few minutes before adding it to your eggs. Otherwise, it will cook your eggs!
  • Make sure you don’t overmix the batter. I whipped the keto sweetener and eggs together with an electric mixer and then used a spatula to mix in the rest of the ingredients.
  • I highly recommend adding the espresso powder to enhance the chocolate flavor. Instant coffee works too. If you don’t like coffee, don’t worry, you can’t taste it.
  • Brownies need to cool before you cut into them. If you cut them too soon, you’ll get dry brownies.

FAQs

How many carbs are in a keto brownie? ›

Fudgy Keto Brownies

These easy one-bowl keto brownies have a secret ingredient to make them extra fudgy and chewy. This might just be the ultimate keto brownie recipe and no one can tell they are low carb and gluten-free. At less than 4g total carbs, you can dig in with gusto!

Are keto brownies good for diabetics? ›

Keto brownies are a favorite because a simple, low-carb, and sugar-free recipe can provide you with the perfect brownies that are full of fudge and chocolate while also being gluten-free and diabetic friendly.

How to make fudgy brownies vs cakey brownies? ›

Fudgy brownies have a higher fat-to-flour ratio than cakey ones. So add more fat—in this case, butter and chocolate. A cakey batch has more flour and relies on baking powder for leavening. The amount of sugar and eggs does not change whether you're going fudgy or cakey.

What can I substitute for brownie mix to make it better? ›

Substitute Core Ingredients

A second change is to use butter instead of oil. For similar reasons to using milk, butter adds a rich and more decadent quality to the batter. Finally, try substituting egg yolks instead of using the whole egg listed in the ingredients of your box brownie mix.

What cancels out carbs in keto? ›

Keto Net Carb Diet. On the ketogenic diet, the "net carb" is the amount of carbs in a food minus the fiber and sugar alcohol. Fiber and sugar alcohol are subtracted because the body does not fully absorb them. The keto net carb diet limits daily carbohydrate consumption to 20-50 grams to induce ketosis.

How many carbs ruin keto? ›

Most ketogenic diet guidelines recommend limiting your total carbohydrate intake to 15-30 grams or 5%-10% of your total calorie intake a day. Eating more than 50 grams of carbs may disrupt ketosis. With keto diets, however, carb restrictions vary from person to person.

Do keto foods spike blood sugar? ›

By cutting carbohydrate intake to essentially zero, following a strict keto diet has been shown to lower blood sugar levels. For people with diabetes, though, Matteo cautions that low blood sugar should be avoided. “For people with diabetes, there is real cause for concern if their blood sugar drops too low,” she says.

Does keto mess with your blood sugar? ›

They found that keto diets don't allow the body to properly use insulin, so blood sugar isn't properly controlled. That leads to insulin resistance, which can raise the risk for type 2 diabetes. The researchers say they didn't evaluate if the diet causes obesity after long-term use.

Do keto bars raise blood sugar? ›

Even though many protein bars are low in net carbs and touted as keto, they can still raise your blood sugar levels.

Should I use butter or oil for brownies? ›

Note that while some brownie recipes do call for melted butter instead of oil, the butter can aerate the batter, altering the texture of the brownies and making them cakey rather than fudgy. So, while you can substitute butter for oil and vice versa, remember that it might alter the texture.

What is a brownie fairy? ›

brownie, in English and Scottish folklore, a small, industrious fairy or hobgoblin believed to inhabit houses and barns. Rarely seen, he was often heard at night, cleaning and doing housework; he also sometimes mischievously disarranged rooms.

What are the three types of brownies? ›

Brownie textures fall into three general camps… Cakey, fudgy and chewy. Cakey brownies, like the name implies, are light, moist and airy, with a slightly fluffy, cake-like interior. Fudgy brownies are moist, dense and gooey, with almost the texture of fudge, but not quite as compact.

What does adding an extra egg to brownie mix do? ›

If you opt to add more eggs, say double the amount, something interesting happens. Even though you are adding more moisture, the air bubbles that you catch in the extra eggs add volume, which decreases the density of your final product. This makes your brownies rise and gives them a much more cake-like texture.

What does adding milk instead of water do to brownies? ›

Brownie recipes traditionally call for water as it serves as a neutral liquid that hydrates the dry ingredients. However, using milk instead of water can impart a creamier texture and richer flavor to your brownies. The milk's fat content adds a smoothness that water cannot provide, resulting in a more indulgent treat.

What oil is best for brownies? ›

Traditionally, brownies are made with sugar, flour, eggs, cocoa powder, chocolate chips, and vegetable oil. However, most recipes call for butter or a neutral product like canola oil.

Do keto meals have carbs? ›
